Mid Autumn Festival - Mom's Homemade Mooncake Jelly

I am already in the mood of celebrating Mid Autumn Festival or Zhongqiu Festival even though it is still a month to go. The festival is celebrated on the 15th day of the eight month of Chinese Calendar and this year it falls on 12th September when the moon is at it's roundest. The traditional delicacy for this occasion is mooncake - a thin tender skin enveloping a sweet dense filling of normally red bean or lotus paste and contain a whole salted egg yolks in its center.

Nowadays mooncakes is celebrated with a twist - Mooncake jellies. My mom is now busy in her little kitchen preparing the jellies of assorted flavors with fresh fruits fillings - strawberry, mango, kiwi, honeydew & durian. A box would consist of 4 flavors and a little surprise in the center, a jelly yolk to symbolize the full moon!
